Cucumber “Chupitos” with yoghurt, avocado and honey

Ingredients for 4 people

  • 400 g cucumber
  • 1 avocado
  • 1 natural yoghurt
  • 100 ml of honey
  • 1 lemon
  • 100 ml of oil
  • “Maldon” salt or sea salt
  • Parsley

A JOURNEY THROUGH THE GASTRONOMY OF EL EJIDO • CUCUMBER

Preparation:

Peel the cucumber and split into equal portions. Scrape out the inside. Peel and slice the avocado and drizzle with oil, lemon and salt. Leave to sand. Fill a third of the cucumber glasses with honey, another with yoghurt and the remaining one with avocado. Place a sprig of parsley in each one and serve on places drizzling with a little oil and sea salt. With the remaining cucumber insides, make small balls and decorate with parsley leaves.
